BD'3C is a Champagne that needs about 30 minutes of air to really show its character (just nice while you have the eggs going on the stove). Extremely focused champers, with a slightly oxidative and tart pear/green fruit profile.
Another stunner that needs to be taken for a test drive is Sea Foam. Rather light structure on the palate with a clear and persistent zingy acid.
Next in line is Catalunya’s Cosmic Vinyaters, a pet-nat made from 100% Garnacha. Fizz here is subtle, drinks almost like a dessert wine, but one that is FREEESH. BWE's pet nat could be the most serious one we have in our portfolio, while Borachio’s Pash Rash is just full of fun all the way through.
Wrapping up with a pet nat from Australia, which usually finds itself in the more “food-friendly” category.
